Highlights from RIMFIRE ENEWS Winter 2007 Issue Number 9  
 
Are you in need of some chill-chasers to ward off the first cool evenings of winter? At Rimfire, we've got plenty of ideas that are certain to warm you up from the inside. Our cellar door is abuzz with freshly bottled 2006 vintage Chardonnays as well as some very individual red varieties and fortified styles.
 
Rimfire 2006 Reserve Chardonnay
 
Following the success of the 2005 Reserve Chardonnay, introduced exclusively to Rimfire Wine Club members last year, we are delighted to announce the release of our superb 2006 vintage. The 2006 Reserve Chardonnay was drawn from smaller crops of intensely flavoured fruit and regular berry sampling by the winemaker ensured that only fruit showing rich, concentrated flavours was chosen. Grapes were harvested at night and the juice had only minimal skin contact - beautifully preserving the true varietal and textural characters of the fruit. The juice was carefully fermented in new, one-year-old oak barrels for 10 months and the result is a complex, refined Chardonnay. Luscious peaches and cream flavours fill the palate complimented by tantalising stone fruit/melon characters and the softest hints of warm vanillin oak. This wine is available now in limited quantities; order yours today to avoid disappointment!
 
Red, Red, Ready for Winter

Rimfire 2004 Shiraz
 
An elegant, medium bodied wine, this vintage Shiraz exhibits spicy red berry characters with the slightest hints of toasty oak, licorice and tobacco. Those of you who fell in love with our 2003 Shiraz are about to fall in love all over again! With its soft, supple tannins and lingering finish, the Rimfire 2004 Shiraz is an ideal accompaniment to roast beef, spicy Italian-style pizza and rich, robust tomato pastas.
 
Rimfire 2005 Cabernet Sauvignon
 
Soft vanillin oak, warm toast and licorice spice flavours dominate the palate of our 2005 Cabernet Sauvignon. Crafted in an approachable, fuller style and retaining fresh primary berry flavours, this wine boasts soft chewy tannins and a lingering finish on the palate. Rimfire Cabernet Sauvignon is highly regarded for its longevity and gives a handsome reward after five or more years in the wine cellar. Match this wine with spit roast lamb or beef Wellington - your tastebuds will love you for it!
 
Rimfire 2005 Sangiovese
 
Wonderful drinking and a staff favourite at the moment is our Tuscan-style Rimfire 2004 Sangiovese - it just keeps getting better. Careful oak management has ensured the essential savoury Italian spice and earthy berry flavours shine through. Light and dry with spicy raspberry and blackberry characters, this wine shows vibrant fruit, integrated tannins and excellent length. A great red for mid afternoon lunches or, alternatively, match this wine with Mediterranean-inspired cuisine.
 
Rimfire 2007 Tinta
 
The cool winter nights are upon us - but with increasingly warm days all year round - any day is a great day for a fashionably chilled glass of rosé. And due to the enormous popularity of our gold medal-winning rosé Rimfire 2006 Tinta, we've been working overtime to bring you the newest vintage of this sophisticated wine style. With its vibrant cherry colour and its complex palate, the 2007 Tinta is an absolute delight to drink. The flavours are both sweet and savoury, with blackcurrant and raspberry nuances and a slightly peppery aroma that is incredibly appealing. Our Tinta is a serious wine - the palate is tight and dry, making it a great aperitif. Put this wine at the top of your shopping list - the 2006 vintage Tinta sold out in record time!
 
Rimfire Verdelho Mistella
 
Many of our wine club members have been asking about Rimfire's Verdelho Mistella and finally, after several years of careful cellar ageing both in barrel and bottle our new delicious release is available to enjoy. Our enormously popular, Mistella was an absolute sell out in the previous release and we anticipate this same season.. Rimfire's Verdelho Mistella is a highly aromatic dessert style wine and has been crafted using pure Verdelho grape juice to produce a mouth-filling, luscious, fresh sweet style of wine. A perfect accompaniment to desserts such as pannacotta, cheesecake or to enjoy with a simple cheese platter.

From the Rimfire Vineyard
 
While the weather might be cooling down, things are heating up in the Rimfire vineyard as we move to the next important phase of the vineyard calendar - pruning. Many of Australia's wine regions are feeling the effects of a stressful, dry summer - and our focus will be towards producing slightly smaller yields in 2008 to preserve the maximum amounts of varietal flavours with the appropriate balance of natural sugars and acidity best suited to Rimfire's distinctive wine styles. Our vineyard management team put this theory into practise during the 2006 vintage growing season, opting to decrease fruit yields by some 20 per cent, and as a result we are seeing some of Rimfire's most promising wines to date. Expect the 2007 whites to be highly aromatic, with wonderful depth of flavour and good natural acidity. Reds from this vintage are shaping up to be bold, intensely perfumed wines with rich, ripe berry flavours. Expertly supervised irrigation and water management ensures our vines have remained hale and hearty, and now even in these dry times, the Rimfire vineyard is often referred to as an oasis in the country.
 
The winter holidays are fast approaching and this is a popular time for many to sojourn to the country side. The crisp fresh air in the mornings, and cosy fireside dinners under a clear starlight night. A glass of a rich full red, perhaps a sip of delicious warming Mistella.
